Located in Hamamönü, one of Ankara's historical and cultural centers, Harlı Fırın is among the establishments that prepare Gaziantep cuisine faithfully to its regional origins. The restaurant, which opened in December 2023, is backed by a family history dating back to the 1940s and professional experience accumulated in Ankara since 1976.
Harlı Fırın, brought to life by Anıl İdikut, the third-generation representative of the business, aims to bring not only the recipes but also the production philosophy of Gaziantep cuisine to Ankara. For this reason, the masters working in the kitchen come from Gaziantep, and many of the basic ingredients used are also sourced from Gaziantep.
A Tradition of Craftsmanship That Has Continued for Three Generations
The story of Harlı Bakery begins in the 1940s in the Eblehan neighborhood of Gaziantep with Fikri İdikut, known as "Somuncu Fikri" (Fikri the Bread Maker). After the family settled in Ankara in 1957, Tuncay İdikut brought the experience he gained in various businesses to his own establishment in 1976.
This legacy, continued today by Anıl İdikut, combines nearly half a century of family experience with a new generation's understanding. Every product prepared in Harlı Fırın's kitchen is built upon knowledge and craftsmanship passed down from generation to generation over the years.
An Approach That Preserves Authenticity in Gaziantep Cuisine
Gaziantep cuisine represents a deep-rooted gastronomic heritage, encompassing not only recipes but also the ingredients used, cooking techniques, and culinary expertise.
At Harlı Fırın, to maintain this philosophy, spices, local products, and many essential ingredients are sourced from Gaziantep. The aim is to ensure that the flavors experienced by guests closely resemble traditional recipes from their region.
The restaurant is also among the pioneering establishments in Ankara offering chickpea wraps and liver stir-fry served with Gaziantep-style tırnaklı pide (a type of flatbread). Gaziantep lahmacun (a type of flatbread with toppings), prepared according to geographical indication standards, stands out as one of the most popular items on the menu.
TasteAtlas Attracts International Attention with its Success
The lahmacun prepared by Harlı Fırın has been included in the "World's Best Lahmacun" list published by TasteAtlas, one of the world's leading gastronomy platforms.
Participation in international gastronomic platforms is considered one of the important indicators that makes a restaurant's traditional production methods and product quality visible.
Traditional Kebabs Prepared with Seasonal Products
Harlı Fırın's menu doesn't consist solely of classic Gaziantep delicacies.
Eggplant Kebab, prepared with eggplants brought from Birecik during the summer, Onion Kebab, made with kebab onions in the winter months, and New World Kebab, offered for a limited time during the spring and summer, are examples of a culinary approach that centers on the use of seasonal products.
This approach ensures that products are used in their natural season while also preserving the traditional structure of Gaziantep cuisine.

Anıl İdikut: “Our aim is to keep Gaziantep cuisine alive as it is.”
Anıl İdikut, the founder of Harlı Fırın, describes the company's core philosophy with these words:

We continue our family tradition, which has lasted for three generations, with the same care, and we strive to preserve this unique structure, from the products we use to our team in the kitchen.”
