Students, academics, and industry representatives came together at a food and innovation event held at the Middle East Technical University (METU). At the event, food engineering students showcased innovative products they developed as part of their Food Production Process Design (FPD) course, while common misconceptions about gluten and palm oil were evaluated from a scientific perspective in interviews and discussions.

The 2nd Food Design and Innovation Festival, organized by the METU Department of Food Engineering and the Food, Beverage and Agriculture Policy Research Center (GIFT), hosted students' innovative projects as well as current discussions in the food sector. At this year's festival, held for the second time, projects developed by final-year students within the scope of the Food Production Process Design (FPD) course were exhibited, while experts engaged in discussions and talks with students, evaluating common misconceptions about gluten and palm oil in light of scientific data.
Dr. Fahri Yemişçioğlu: “Evaluations regarding palm oil should be based on scientific data.”
During the event, Food Engineer Dr. Fahri Yemişçioğlu met with students, conducted interviews and discussions with them, and addressed misconceptions about palm oil and vegetable oils, making the following assessments: “A one-dimensional evaluation of refined vegetable oils and processed foods is not a correct approach. Palm oil, palm kernel oil, and fractions obtained from these oils through physical methods are preferred in different food applications due to their functional properties. Thanks to these oils, the sector has been able to significantly reduce the use of partially hydrogenated oils and trans fatty acids in many countries before legal regulations came into effect.”
Yemişçioğlu stated that palm oil is one of the most widely used vegetable oils in the world, and emphasized that evaluations of food components should be based on production technologies, sustainability criteria, and scientific findings.
Mine Güngör: “Assessments regarding gluten should be based on scientific principles.”
Food Engineer Mine Güngör, who met with students as part of the event, drew attention to the misinformation circulating about gluten in recent years and said the following:
“Bread is an affordable and accessible source of protein and fiber. Consumed for centuries and made primarily from wheat, bread naturally contains gluten. Generalizing specific health conditions like gluten intolerance as if they apply to all consumers is an approach that does not align with scientific facts. Assessments of food components should be made in light of individual health conditions and scientific data.”

During the event, interviews and discussions with students assessed their perceptions regarding topics such as gluten and palm oil. The event, where students' views were heard, emphasized that the accurate transmission of scientific knowledge and an engineering approach are fundamental elements of food safety and innovation in the food industry.
