Award-winning Tuğra's Ramadan Menu Brings Traditional Flavors to Iftar Tables
In the magnificent atmosphere of Çırağan Palace, the award-winning Tuğra, which blends the heritage of Ottoman and Turkish cuisine with modern touches, continues to bring its rich gastronomic tradition to iftar tables throughout Ramadan. The restaurant, which is included in the Michelin Guide Recommendation List, stands out for its excellent service, and has been awarded three hats in the "Outstanding Tables" category by Gault&Millau, invites its guests to a veritable feast with its extensive iftar menu.
The iftar meal begins with a selection of traditional Ramadan appetizers that bring together the indispensable elements of the Ramadan table. These appetizers include dishes such as sahine (a type of kebab), Antep olive piyaz (a salad), lentil fava, muhammara (a type of dip), olive oil platter, Gavurdağı salad, a charcuterie board, and honey and clotted cream. The menu continues with Çeşm-i Nigar soup, prepared with Mardin red lentils and mint butter, while intermediate courses such as stuffed cabbage rolls served with sumac yogurt, paçanga böreği (a type of pastry), içli köfte (stuffed meatballs), and pideli köfte (meatballs in pita bread) are also offered. For the main courses, classics take center stage. Hünkâr beğendi, an iconic recipe from the palace cuisine, lamb shank served with keşkek (a type of stew), known for its tender texture and slow cooking over long hours, creating one of the strongest narratives of winter meals, and tas kebab, which combines deep-rooted cooking traditions with contemporary elegance and is completed with mashed potatoes, are offered as choices for guests at the iftar table. Freshly baked pita breads from Saray pastry shop are among the stars of the table throughout the iftar meal. Finally, individual tasting portions of kazandibi, güllaç, helva, kalburabastı, revani, kaymaklı ekmek kadayıfı, baked rice pudding, quince dessert, and hand-rolled pistachio baklava meticulously prepared by Gaziantep baklava chefs in Saray's baklava room create a classic dessert feast. Guests can also choose from a unique dessert buffet set up specifically for the iftar meal, featuring all-handmade, delicious sweets.
