Inspired by Tradition: Rüya Istanbul Opens | HORECA TREND

With its deep-rooted history dating back to the 17th century and its unique location on the Bosphorus shores Ciragan Palace KempinskiLocated in the hotel section of Dream IstanbulOffering a culinary journey that sophisticatedly interprets the classics of Anatolian cuisine with modern, fresh touches. Each dish celebrates Anatolia's rich culinary heritage with passion and mastery, infusing the warmth and intimacy of sharing. Located within Rüya Istanbul, the bar overlooking the Bosphorus transforms into a delightful space for those who want to continue their evening with delicious snacks and cocktails prepared by expert mixologists.

It was brought to life through the meticulous work of Ralph Radtke and Umut Özkanca.

The venue, opened with the hotel's investment, is a result of over a year of meticulous work by Ralph Radtke, General Manager of Çırağan Palace Kempinski Istanbul and Regional Director of Kempinski Residences Turkey, and Umut Özkanca, creator of the Rüya brand and Vice Chairman of the Board of Directors of Doğuş Food, Beverage, Tourism and Retail Group. It brings a fresh breath of fresh air to the Bosphorus line.

Ralph Radtke"We've been searching for the right partner to add to Çırağan Palace Kempinski Istanbul's rich gastronomic offerings for a long time. Confident in the strong positioning it will create within the hotel segment of Rüya Istanbul, we've made the full financial investment in this project. As a global ambassador of Turkish hospitality, we believe that bringing the unique flavors of Anatolia's diverse regions, with modern interpretations, to our unique location on the Bosphorus will create a new culinary experience for guests from diverse destinations and across generations," he said.

Rüya, which has attracted attention with its international success, is now returning to its roots, where it belongs. Umut Özkanca Regarding the brand's arrival in Istanbul, he said, "Some hotels are identified with certain cities. In Istanbul, the Çırağan Palace is the strongest representation of this identification. This is precisely the origin of the story. The land of Anatolia was where Rüya began. Now, we are connecting to this land by being located in one of the city's most iconic locations."

Traces of the Past, Comments of the Present

Rüya Istanbul's restaurant menu draws inspiration from traditional recipes, reinterpreting Anatolian flavors with seasonal produce and contemporary techniques. With dishes centered around a culture of sharing, the menu highlights the warmth of crowded tables and the richness of dining together.

Signature dishes like beef ribs braised for 24 hours and mushroom keşkek combine respect for cultural heritage with refined presentations, retelling the deep-rooted stories of Anatolia with a modern twist. One of Rüya's iconic dishes, "Simit Caviar," is a guest favorite with its powerful flavor. The two-cheese Black Sea pide, prepared with a three-day fermentation process and baked in a wood-fired oven, is served with eggs cooked sous vide over low heat, creating an unconventional balance of flavors. Unique seafood techniques define the menu. Sea bass marinated, made with thinly sliced sea bass, is prepared using a special cooking method inspired by crudo and paired with an apple-mustard sauce to create a layered flavor profile.

Among the unique flavors on the dessert menu, the "Chocolate and Turkish Coffee" dessert stands out with its sophisticated presentation, combining a salted caramel dark chocolate ball with cardamom and Turkish coffee ice cream, adding a contemporary interpretation to classic flavors.

The bar menu, like the food, is inspired by Türkiye's seven regions. Iconic Turkish flavors like cardamom, rose, pomegranate, honey, spices, citrus, and mint are featured prominently in signature cocktails, offering a visual and palate-pleasing experience. Cocktails like the "Nazar Sour" and the "Anatolian Fizz," which evoke the aromatic spirit of their respective regions, demonstrate that Rüya has stories to tell not only in the kitchen but also at the bar.

The City's New Meeting Point

More than just a restaurant, Rüya Istanbul will offer a lifestyle centered around fine dining in one of the city's most iconic locations. In addition to the restaurant, the bar, enriched with signature cocktails, live beats, DJ performances, and contemporary touches, is poised to become the city's new evening gathering place.
