Unilever Food Solutions has prepared the first of its 250 editions, which are prepared with the work and insights of more than 1600 chefs from different cultures around the world, 2023 of which are in-house. “Future Menus Trend Report 2025” The report, which has attracted great attention since its publication, aims to give chefs more freedom in their profession, which they are passionate about, to increase their creativity and to inspire the sector.
Each year, Menus of the Future identifies the key trends shaping the global food and beverage industry. This year, the report features four key trends. These trends reflect the transformation in the industry and place a strong emphasis on the concept of “Tastes That Move.” From the chefs’ perspective, the movement of taste comes to the fore, revealing how food is integrated with emotion, discovery and changing needs and solutions to succeed in the out-of-home consumption sector.

The four key trends that stand out this year in the Future Menus Trend Report 2025 are: Chef's Touch on Street Food, Cuisines Without Borders, Back to Roots and New Generation Dining Experience.
These trends have been shaped by three major waves of change. The first is a strong culinary transformation that underlies all trends. The intense demand for Asian and Latin American cuisines on a global scale is bringing about a major change in food culture. The second major change is the impact of human mobility on the culinary world. Migration and migrant tourism are the biggest drivers of the Chef’s Touch on Street Food, Cuisines Without Borders and Back to the Roots trends. Chefs are becoming more daring and innovative in creating unique dishes by combining new ingredients, culinary techniques and flavors. Finally, digitalization is transforming dining experiences and giving life to the Next Generation Dining Experience trend. Technologies such as artificial intelligence and augmented reality are making it possible to offer more personalized experiences to guests. At the same time, they are helping chefs create innovative dishes that adapt to the personal tastes of their guests.

Chef's Touch on Street Food: This trend focuses on taking street food to the next level by using high-quality ingredients and refined techniques, while still maintaining the intimate charm and sense of discovery of street food. This creates a higher quality dining experience while still offering the relaxed and dynamic atmosphere of street food culture. This trend appeals to modern food lovers who are looking for accessible and exciting flavors, especially inspired by world cuisine.
Cuisines Without Borders: This food trend is transforming different food traditions into harmonious and innovative experiences. This movement is being driven by a new generation of chefs who aim to honor their multicultural roots, as well as globalization and immigration. Chefs are reimagining how different culinary influences can be combined, creating unique and authentic dishes that go beyond innovation.
Back to the Roots: This trend, which celebrates and revives lesser-known regional cuisines, gives the value they deserve to local ingredients and cooking techniques rooted in cultural heritage. It emphasizes the importance of moving forward while preserving the past, and keeping authenticity at the core of every dish. This trend, which often originates within a region and reaches a wider audience over time, requires preserving the essence of the flavors in order to be successful.
New Generation Dining Experience: The dining experience is now evolving beyond ordinary personalizations to more interactive and personal experiences where guests can be involved in the preparation and shaping of the meal. The new generation dining experience trend focuses on offering unique and distinctive experiences by making food multi-sensory and inclusive.

Future Menus Report Methodology
The Future of Menus trends and insights in the report have been meticulously researched and validated. The trends were compiled using robust global data and extensive feedback from chefs. This data includes reports, social media analytics and over 21 million online searches across 300 countries. In addition, detailed feedback from over 20 chefs across 1.100 markets and contributions from Unilever Food Solutions’ experienced chef team were also included in the process. Unilever Food Solutions chefs developed delicious recipe concepts that reflect the trends in Future of Menus.
