Special Recipe for 'Veganuary' from Dietician Emine Uluçay: Shepherd's Pie
A very popular recipe in the UK, originally made with minced meat and potatoes, but now made with red beans and sweet potatoes, this is a healthy recipe that everyone can enjoy, vegan or not!
Materials:
For the above:
3 medium potatoes
3 medium sweet potatoes (or + 3 regular potatoes)
Half a glass of plant milk
For six:
1 pieces of onion
1 chopped/grated garlic
5 diced mushrooms
2 packs of Duru Pratik boiled red beans
1 pack of Duru Practical boiled garnish
1/2 pack Duru Pratik boiled corn
5 medium sized mushrooms
1tbsp olive oil
1tbsp starch / whole wheat flour
2tbsp tomato paste
3 tbsp soy sauce
2 water glass of water
2 bay leaf
Salt, black pepper, dried thyme
Preparation of:
Wash, peel, slice and boil the potatoes in a large pot of salted water until soft. While the potatoes are boiling, fry the onion and garlic in olive oil. Add the sliced mushrooms and cook until soft. Add the Duru Pratik garnish, corn and red beans and mix. Add salt, pepper, spices, tomato paste, soy sauce, starch and water and cook for another 4-5 minutes. Pour the vegetable mixture into the greased baking dish. Add the plant-based milk to the cooked potatoes and mash them. Spread the puree evenly over the mixture in the baking dish. Cook in a preheated oven at 200 degrees for 15-20 minutes or until golden brown.
After waiting for it to cool down a bit, you can slice it and enjoy!
