Roof Mezzepotamia's kitchen is entrusted to Gökberk Özbay and his team, who began their career journey at a young age. Inspired by Mesopotamia's legacy of creating a new civilization and culture, Roof Mezzepotamia reinterprets traditional Turkish cuisine with modern touches. Featuring a wide menu reflecting influences from all seven regions of Turkey, the restaurant wins the hearts of food lovers with its innovative touches and cooking techniques. Preparing its winter menu with products sourced from local producers based on the principle of seasonal consumption, the chef offers a complete gastronomic experience. The culinary journey begins with appetizers such as black garlic butter, cold-pressed olive oil, and Halhali olives, and continues until the end of the night. Cold starters include: Leeks in Olive Oil prepared with arugula oil, pomegranate molasses, and crispy leeks ; Beetroot Serme prepared with confit cooking techniques ; and Sinkonta prepared with peeled pumpkin, pumpkin seeds, onion oil, and smoked yogurt . The menu includes Atom , prepared with Denizli kale peppers, Antakya yogurt with clotted cream, and dukkah spices ; Sea Bass Marinade, prepared with sea bass, capers, arugula, green oil, and red chili peppers; and Mutabbel, prepared with eggplant, Konya Bozkır tahini, and Samandağ hot pepper oil .
