Talking about the details and benefits of the 'Production of Powdered Protein and Prebiotics from Tea Production Process Wastes' project, Beta Gıda Istanbul Branch Manager Hatice Uğur, provided the following information: “During the black tea processing process, a large amount of tea fiber is released as waste, and these fibers are sold to companies at low prices for purposes such as fertilizer and biofuel. In the examination, it was seen that the carbohydrate content of the tea fibers was high (approximately 80%) and the protein content (approximately 12%) could be considered as a source of vegetable protein. Based on this, we aimed to obtain high-yield powder protein and prebiotic extracts from tea fibers, determine their functional and bioactive properties, and produce various tea-based functional foods. With this project, for the first time, the functional and bioactive properties of powder protein and prebiotic extracts produced from tea processing waste were characterized and their usability as functional food additives in powder form was examined. In addition, some functional foods containing tea protein and prebiotics will appear in the market for the first time, which will enable the expansion of the functional food market. With this project, an alternative plant protein and prebiotic source was produced domestically for the first time and has a significant difference from its counterparts abroad in terms of source.”
