BigChefs, Turkey's leading full-service restaurant chain, continues its commitment to providing healthier and safer food to its guests with the slogan "Always Better, Always Eat Better" in its new menu period. In this context, BigChefs is taking a new step in the sector with the Safe Food Certificate agreements made with the Out-of-Home Consumption Suppliers Association (ETÜDER).

BigChefs, works meticulously with approximately 150 suppliers. Among these are large companies (Coca-Cola, Pınar and Unilever) that already have Safe Food Certificates, such as leading brands in the food and beverage sector. The process of making safe food certificate agreements with other suppliers continues. BigChefs; It takes a step towards “always better” with its products coming from local producers that it supports with the “Women of the Land” project. BigChefs; It offers a different and better experience by bringing together special flavors, seasonal menus, world cuisine and Anatolian flavors.

BigChefs, which continues to expand its number of restaurants with the investments it has received and increasing sales momentum, has accelerated branch openings in Turkey and abroad as of the beginning of 2024. With its Numnum and Buselik brands; it has reached a total of 6 branches in 11 cities with 28 branches opened in Turkey in the first 120 months of the year. BigChefs, which continues to provide service with 8 branches in 11 countries abroad, aims to reach a total of 144 branches by the end of the year. BigChefs continues to offer safe and delicious food to its guests with the aim of always offering better.

Altan Kosova: “All Suppliers Will Be Certified in the New Menu Period”

In line with our commitment to safe food, we are delighted to share the positive developments in the supplier certification process. BigChefs CEO Altan Kosova“Currently, 20 out of 9 suppliers within the scope of the project have received Safe Food Certificates and have become members of ETÜDER. We provide 65% of our total purchases from our Safe Food Certified suppliers. These figures also show us that we have taken important steps towards achieving our goals. Our year-end target is to increase this figure to 80%. We aim for 2025% of our suppliers to be certified by the end of 95. As BigChefs, we will continue our commitment to always provide our guests with safe and high-quality food,” he said.

With the motto "Different Meyhane," Ters Köşe preserves traditional tavern culture while reinterpreting it with creative and unexpected touches. Its name stems from this approach: dishes like fish lahmacun, fish mantı, fish adana, and even fish jelly offer guests an experience both familiar and surprising. The new branch, opened in Kadıköy, can accommodate a total of 86 guests with an indoor capacity of 88 and an outdoor capacity of 174. Located within Terminal Kadıköy, the space is redesigned as part of a social transformation project, under the railway, where restaurants, music, and culture intertwine. Offering the feeling of a hidden garden of flavors in the heart of the city, the venue becomes a special meeting point, breathing fresh air amidst the busy city life, distinguished by its greenery, and combining the comfort of the open air with the dynamism of the city.

Creative Warmth in Architectural Atmosphere and Decoration

Ters Köşe's interior design was designed by 89 Architecture. This design simultaneously embodies both respect for tavern culture and innovative elements. The "rakı library" that greets guests at the entrance, displaying bottles of various rakı brands, serves as a visual homage to the tradition of rakı, extending from past to present. The custom design and hand-drawn illustrations used throughout the interior emphasize the character of this seafood-focused tavern, while the carefully landscaped outdoor area creates the feeling of a tranquil garden within the city.

In addition to the decorative details, the musical selection also contributes to the spirit of the space. 80s Turkish pop songs, Aegean Greek influences, and Mediterranean Italian melodies make Ters Köşe not just a dining spot but an atmospheric experience.

Everything Made with Meat Can Also Be Made with Fish

The menu is dominated by a creative approach, shaped by the belief that "everything made with meat can also be made with fish." While the seafood-centric cuisine bears the hallmarks of a classic tavern, every dish showcases boundary-pushing ideas. Dishes like fish kokoreç, fish karniyarık, red mullet chips, and fish döner evoke a sense of both nostalgia and discovery. Appetizers are prepared with seasonal vegetables, and freshness and natural flavors are the cornerstones of the menu. While the menu doesn't specifically cater to vegan or gluten-free options, there are options to suit these preferences in the appetizers and hot entrees.

Presentation is as important as flavor in the chef's approach. The balance of color, texture, and temperature is carefully considered in each dish. Simple dishes are chosen to center the food, highlighting the natural flavor of the produce and the chef's creative interpretation. Ters Köşe enters the kitchen not just to satisfy the hunger but to create a new tavern language.

Ters Köşe welcomes guests every day of the week from 12.00:00.00 PM to midnight, making it a popular spot for group dinners and celebrations. Special menus are available for reservations of 10 or more people. For birthday celebrations, the restaurant's signature dessert, the "Crispy Tahini Zucchini Tower," and the tradition of blowing out candles become a unique Ters Köşe ritual.
