Roka Istanbul Hosts Maksut Aşkar in its Kitchen!

Representing contemporary Japanese cuisine with its locations all over the world, Roka continues the year in which it celebrates its 20th anniversary with a collaboration with a world-famous Turkish chef. Maksut Aşkar, who introduces Anatolian cuisine with the plates he serves in his restaurant Neolokal as well as in restaurants in different cities of the world, is the guest of Roka Istanbul's kitchen. The event, where chefs Suna Hakyemez and Maksut Aşkar will bring together Japanese and Turkish cuisines, will be held on the evenings of Monday, February 12 and Tuesday, February 13.

The chefs, who came together for the guest chef event to be held for the first time in Roka restaurants, will share their creativity, their passion for bringing together extraordinary flavors, the different techniques of the two cuisines and the stories they weave behind their plates. Roka Istanbul's chef Suna Hakyemez, states that this collaboration will offer a unique experience blending the rich heritage of two cultures. Suna Hakyemez said that they started the preparations of the idea, concept and menu of this project, which Roka, an international restaurant group, will implement for the first time in Istanbul, months ago and said, “During these two nights, we worked to take our guests on an unforgettable journey with Turkish and Japanese flavors. Maksut Askar"'s creativity, knowledge of various cultures and closeness to Japanese culture are a great opportunity for this experience," he says.

Maksut Aşkar said about the event: “The similarity of Japanese and Anatolian culinary cultures lies in respect for traditions, products and producers. It is a great pleasure for me to blend the techniques of Japanese cuisine with the ingredients of Anatolian cuisine under the roof of Roka, with the respect I have for these common values. “With Chef Suna Hakyemez, we took care to create a menu that both reflects our common culinary passion and invites you to a special gastronomic journey,” he shares.

From February 3rd to March 3rd, the hotel’s signature Cantonese cuisine restaurant, Canton Blue, is offering guests special Lunar New Year à la carte options and a meticulously prepared six-course set menu experience for lunch and dinner. The menu, featuring refined interpretations of iconic celebratory meals, includes:

Starters: Lunar New Year dim sum and seasonal snacks are offered, including shrimp and white mushroom dumplings; “Golden Fish” dumplings served with pumpkin-seafood sauce; barbecue Ibérico pork; and chicken with soy sauce.

Main Dishes: The menu includes steamed sea bass with ginger and shiitake mushrooms; pan-fried lobster in a salted egg sauce; wagyu beef stir-fry with wild mushrooms; and homemade spinach noodles.

Dessert: Chestnut cream and mandarin mousse, offering a symbolic finale of luck and abundance, complete the menu.

Baijiu Celebration at Little Blue Noodle Bar

The collection consists of hand-dyed red textiles, evoking themes of the continuity of the life cycle, emotions, and vitality. Fanglu’s approach, drawing inspiration from the textile traditions of the Bai communities in Yunnan, pays tribute to the women who have kept this craft alive for generations. The installation, The PeninsulaThis reflects 's commitment to heritage, craftsmanship and contemporary cultural expressions.
